Bill’s beetroot soup

Got some beetroot and apples from the garden looking for a delicious recipe?

With huge thanks to our very good friend and master gardener Bill Tait, here’s a fabulous recipe for a hearty soup. Laura confirms it’s totally delicious!

One large onion – chopped

Two or three potatoes – chopped

Two large cooking apples – cored, chopped but not peeled

Two or three large carrots – chopped

Two medium beetroots – chopped

Two chicken/vegetable stock cubes

You’re starting to feel healthier already, aren’t you!

Briefly, fry the chopped onion in butter. Add the potatoes, beetroot, cooking apples and carrots, together with the stock cubes and a sprinkle of salt and enough water to make up a good pan full. Bring to the boil and simmer until the vegetables are soft.  Liquidise and serve with some cream or yoghurt.
